Lemongrass Sorbet - cooking recipe

Ingredients
    5 stalks lemongrass, tough outer leaves removed, finely chopped
    3/4 cup sugar
    1/4 cup fresh mint leaves
Preparation
    Place lemongrass in a medium saucepan. Cover with 3 cups water. Add sugar and heat on low heat, stirring, until sugar dissolves.
    Increase heat to medium and simmer, covered, for 5 mins. Add mint and simmer, uncovered, for 2 mins. Cool.
    Process mixture in a food processor or blender. Strain into a bowl and refrigerate until cold.
    Freeze in an ice cream maker according to manufacturer's directions. Place in an airtight container and freeze overnight. If you don't have an ice cream maker, strain into a metal container. Cover and freeze for 1 hour, until starting to freeze around edges. Process mixture again and freeze for 4 hours or overnight, until completely frozen.
    Place in refrigerator for 30 mins before serving. Scoop into bowls to serve.
