Chicken Sausage And Orzo Salad - cooking recipe

Ingredients
    1/4 cup lemon juice
    1 clove garlic, crushed
    1/3 cup plus 1 tbsp olive oil
    12 oz orzo pasta
    1 pkg (12 oz) chicken sausages
    7 oz button mushrooms, halved
    1 small red onion, thinly sliced
    2/3 cup jarred roasted red pepper strips, drained
    2 cups baby arugula leaves
    1/4 cup loosely packed fresh flat-leaf parsley leaves
Preparation
    For the lemon dressing, whisk lemon juice, garlic and 1/3 cup oil in a small bowl. Season to taste.
    Cook pasta in a large saucepan of boiling water according to package directions; drain. Rinse under cold running water; drain.
    Meanwhile, heat 1/2 tbsp oil in a large skillet on medium heat. Cook sausages, turning occasionally, for 10 mins, or until browned. Remove from pan; cover to keep warm. Heat remaining oil in same pan on high heat. Cook mushrooms for 5 mins, or until browned.
    Thickly slice sausages. Combine sausages, pasta, mushrooms, remaining ingredients and lemon dressing in a large bowl; toss to combine. Season to taste.
