Curry Fried Rice With Chicken - cooking recipe

2 cups long-grain rice
3 tbsp oil
2 None boneless skinless chicken breasts
7 oz mushrooms, halved
1 None onion, finely chopped
1-2 tsp curry powder
9 oz broccoli, cut into small florets
5 oz carrots, peeled and cut into sticks
1/4 cup soy sauce
None None Chives, snipped
Preparation

Cook the rice in boiling salted water according to package directions. Drain well.
Heat 2 tbsp oil in a large nonstick skillet on medium-high heat. Cook the chicken until browned on both sides and cooked through. Add the mushrooms and onion and cook, stirring, until just tender. Add the curry powder and season to taste. Remove the chicken and mushrooms from the skillet. Slice chicken and set it aside.
Heat remaining 1 tbsp oil in skillet. Add the broccoli and carrots to the skillet and cook, stirring, until just tender. Add the rice and cook, stirring, about 1 min. Pour in the soy sauce and about 1/4 cup water and cook, stirring, about 2 mins. Return the chicken and mushrooms to the skillet and cook until heated through. Season to taste with additional soy sauce, salt, pepper and curry powder. Serve with a dollop of yogurt and sprinkle with chives.
