4 1/2 lb plum tomatoes, cut in half lengthwise
15 None fresh sage leaves
4 cloves garlic, thinly sliced
2 tbsp sea salt
None None olive oil, for preserving
Preparation

Preheat oven to 200\u00b0F.
Place tomatoes, cut-side up, on a baking tray. Sprinkle with sage, garlic and salt. Bake for 20 mins, or until sage is dry and brittle. Remove sage from rack. Bake for another 20 mins, or until garlic is dry. Remove garlic from rack. Bake tomatoes for 8-12 hours, or until dry and leathery, turning frequently.
Pack tomatoes, sage and garlic into sterilized jars. Add enough olive oil to cover completely. Seal jars. Store in fridge for up to 6 months.
