Crispy Szechwan Style Chicken - cooking recipe

1 None whole chicken, about 8 lbs, halved
2 tbsp peanut oil
1 clove clove, crushed
1 tbsp Szechwan peppercorns, crushed
1/2 tsp cracked black pepper
None None stir-fried Asian greens, to serve
None None steamed rice, to serve
Preparation

Preheat oven to 400\u00b0F. Place chicken halves in a large baking dish, skin side up. In a small bowl, combine oil and garlic. Brush mixture on chicken and sprinkle with peppercorns and sea salt. Bake 1 hour, until chicken is crisp and cooked through. Using a cleaver or sharp knife, cut into pieces. Serve with Asian greens and steamed rice.
