Baked Apples With Coconut Meringue - cooking recipe

Ingredients
    1 large egg white
    75 g caster sugar
    3 tsp lemon juice
    100 g desiccated coconut
    4 large eating apples, cored (using an apple corer)
    4 scoops vanilla ice-cream
    80 ml chocolate sauce
Preparation
    Preheat the oven to 325\u00b0F. Using a hand mixer beat the egg white until stiff, gradually adding the sugar. Continue to beat for 3-4 seconds between each addition until smooth and glossy. Add 1 tsp of the lemon juice and gently stir to combine. Add the coconut to the meringue mixture and gently stir together with a spatula.
    Cut 12 thick slices from the apples. Place on a large baking sheet lined with parchment paper (you may need 2 baking sheets). Drizzle with the remaining lemon juice.
    Top each apple slice with 2 heaped tbsp of the meringue mixture and gently form a peak with the back of a fork. Transfer to the oven and bake for 15 mins. Serve warm with the vanilla ice cream and chocolate sauce.
