Macaroni With Chorizo And Tomato - cooking recipe

Ingredients
    3 tbsp butter
    2 tbsp flour
    2 cups milk
    1/4 cup grated Cheddar cheese
    12 oz elbow macaroni
    1 tbsp olive oil
    2 None chorizo sausages, sliced
    8 oz cherry tomatoes, quartered
    1/4 cup loosely packed parsley leaves
    None None Crusty bread, to serve
Preparation
    Melt butter in a large saucepan on medium heat. Stir in flour and cook, stirring, 1 min. Remove pan from heat and stir in milk until smooth. Return to heat and cook, stirring, until mixture boils and thickens. Simmer 3 mins. Stir in cheese and season to taste.
    Meanwhile, cook pasta in a large saucepan of boiling salted water according to package directions. Drain well and return to pan. Stir in sauce.
    Heat oil in a medium skillet on high heat. Saute chorizo 1-2 mins. Add tomatoes, cook 1 min to soften slightly. Transfer mixture to pasta. Add parsley and mix well. Serve with crusty bread.
