Lamb And Quark Panzanella Salad - cooking recipe

Ingredients
    3 thick slices white bread, crusts removed, torn
    1/4 cup olive oil
    4 None lamb sirloin steaks
    1 None large red onion, finely chopped
    3 None large tomatoes, coarsely chopped
    2.5 oz pitted green olives
    2 tbsp fresh basil leaves
    4 oz quark cheese (or feta cheese)
Preparation
    Place bread in a large bowl. Drizzle 1 tbsp oil over bread and toss to coat lightly. Heat a large frying pan over medium heat. Toast bread for 2-3 mins, or until golden brown. Transfer to a large heatproof bowl.
    Brush lamb with 1 tbsp oil. Cook for 2 mins per side for medium, or until cooked to your liking. Transfer to a heatproof plate, cover with foil and let rest for 5 mins. Slice.
    Add onion, tomatoes, olives and basil to croutons. Drizzle remaining oil over top and toss to combine. Season.
    Arrange salad and lamb on serving plates. Dollop with quark. Serve sprinkled with black pepper.
