Salmon With Broccoli Almondine - cooking recipe

Ingredients
    2 None large baking potatoes, cut in half lengthwise
    2 tbsp oil
    1 lb broccoli, cut into florets
    4 None salmon fillets, skin on
    2 tbsp flaked almonds
    1 tsp butter
    4 tbsp sour cream, to serve
    1-2 tsp parsley, chopped, to garnish
Preparation
    Preheat oven to 350\u00b0F. Heat a tablespoon of oil in a frying pan and saute the potatoes until lightly golden, then transfer to a baking sheet and bake 30-40 mins, until cooked through.
    Cook the broccoli in boiling, salted water for 5 mins. Drain and return to the pan.
    Meanwhile, add the rest of the oil to the frying pan and cook the salmon fillets, skin side down, for 4-5 mins. Season, then turn the fillets over and cook for another 3 mins.
    In a dry frying pan, toast the almonds until golden brown, then add the butter. When the butter has melted, add the broccoli and stir briefly.
    Serve the salmon on a plate with the potatoes and broccoli, topped with sour cream and parsley.
