Sausage And Sweet Potato Shepherds Pie - cooking recipe

1 lb lamb sausages or other meat sausages
1 tbsp olive oil
1 small onion, finely chopped
3 None celery stalks, finely chopped
1 can (14 oz) diced tomatoes
1 cup frozen peas
1 1/2 tbsp Worcestershire sauce
1 None tomato, thickly sliced
3 cups mashed sweet potatoes
2 tbsp butter, chopped
Preparation

Preheat the oven to 400\u00b0F.
Heat a large nonstick skillet on high heat. Cook sausages 2-3 mins, turning, until golden. Cut into bite-sized pieces. Set aside.
Heat oil in same pan on high heat. Saute onion and celery 3-4 mins. Stir in tomatoes and bring to a boil. Return sausages to skillet. Reduce heat to low and simmer 4-5 mins. Stir in peas and Worcestershire sauce.
Divide among four 1 1/2-cup ramekins. Top with a tomato slice and sweet potato mash. Dot with butter. Place ramekins on a baking pan.
Bake 15-20 mins, until golden.
