Bacon, Mushroom And Potato Casserole - cooking recipe

Ingredients
    2 1/4 lb potatoes, peeled and chopped
    6 tbsp oil
    1 1/2 lb button mushrooms, cleaned and halved
    2 1/2 slices bacon, chopped
    7 None spring onions, trimmed and sliced
    3/4 cup sour cream
    1 cup milk + 2 1/2 tbsp
    2 tbsp butter
    1 pinch grated nutmeg
    1/2 cup medium Cheddar, grated
Preparation
    Preheat the oven to 400\u00b0F. Cook the potatoes in boiling, salted water for 15-20 mins until tender. Heat 2 tbsp oil in a large frying pan, add 1/3 of the mushrooms and saute for 2-3 mins. Add 1/3 of the bacon on continue to cook for 3-4 mins. Remove from the pan. Repeat the process, cooking each 1/3 of the filling separately.
    Add the spring onions to the pan then stir in the sour cream and 4 tbsp milk. Return the mushrooms and bacon to the pan and simmer for 1-2 mins. Season then transfer to a casserole dish.
    Drain the potatoes, season then add the butter, remaining milk and nutmeg. Mash until smooth. Spread the mashed potatoes over the filling in the casserole dish. Sprinkle with cheese then bake for 35-40 mins. Serve.
