Lamb, Spinach And Potato Curry - cooking recipe
Ingredients

1 tbsp vegetable oil
2 lbs diced lamb
2 None onions, chopped
1 (14 oz) jar rogan josh cooking sauce
1/2 cup chicken stock
2 lbs potatoes, peeled and quartered
2 cups baby spinach leaves
None None poppadums, to serve
Preparation

Heat oil in a large, heavy-based saucepan on high. Cook lamb in batches for 2-3 mins each, until browned. Set aside.
Add onions and saute for 4-5 mins, or until tender and lightly golden. Stir in cooking sauce and stock.
Bring to a boil. Reduce heat to low. Add lamb and simmer, covered, for 30 mins, or until meat is tender. Add potatoes and cook, covered, for 25 mins, or until tender.
Stir in spinach leaves and cook for 3 mins, or until wilted. Serve with poppadums.
