Chicken In Mushroom Sauce With Herby Mashed Potatoes - cooking recipe

Ingredients
    1 2/3 lb baking potatoes, peeled
    2 tbsp olive oil
    1 1/4 lb chicken breast, cut into strips
    1 None onion, peeled and diced
    1/2 lb button mushrooms, peeled and sliced
    1 tbsp all-purpose flour
    1/2 cup heavy cream
    1 2/3 cup chicken stock
    2 tsp Dijon mustard
    2 None spring onions, sliced
    1/2 cup 2% or whole milk
    2 tbsp butter
    3 tbsp fresh flat-leaf parsley, finely chopped
    3 1/2 tbsp fresh chives, finely chopped
    None None freshly grated nutmeg
Preparation
    Cook potatoes in boiling salted water for 20 mins.
    Heat oil in a saucepan and saute chicken, turning, for 3 mins. Add onion and mushrooms and cook for 4 mins. Season then add flour and cook for 2 mins. Add cream, stock, mustard and spring onions and simmer for 2 mins.
    Drain potatoes, add milk and butter and mash. Add parsley and chives. Season and add nutmeg. Serve with chicken and sauce.
