Three Cheese Spaghetti - cooking recipe

Ingredients
    1 pkg (16 oz) spaghetti
    1 cup ricotta cheese
    3 tbsp unsalted butter, at room temperature
    None None Pinch of cayenne pepper
    3 oz blue cheese, cut into cubes
    1/2 cup grated pecorino or Parmesan cheese
Preparation
    Cook spaghetti in a large saucepan of boiling, salted water according to package directions. Drain and return to pan, reserving 1 cup of cooking water.
    Meanwhile, combine ricotta, butter and cayenne pepper in a small saucepan on low heat. Stir in reserved cooking water to make a sauce.
    Add ricotta sauce, blue cheese and grated cheese to pasta; toss to coat. Serve.
