Stuffed Pork Chops With Mushroom Sauce - cooking recipe

Ingredients
    3 tbsp olive oil
    1 lb mushrooms, cleaned, 3.5 oz finely diced, remainder thickly sliced
    3.5 oz chorizo, casings removed and meat finely chopped
    1 None onion, peeled and finely diced
    5 sprigs fresh thyme, chopped + extra to garnish
    1 tbsp breadcrumbs
    1 None egg yolk
    2 None large pork chops (approx 1 1/4 lb), a deep pocket cut in each
    1 tbsp all-purpose flour
    1/3 cup dry sherry
    3/4 cup heavy cream
    2/3 cup vegetable or chicken stock
Preparation
    Heat 1 tbsp oil in a frying pan and saute diced mushrooms. Add sausage and onion and cook for 2 mins. Remove from heat, add thyme and season with pepper. Let cool slightly then mix in breadcrumbs and egg yolk.
    Preheat oven to 350\u00b0F. Stuff pork chops with chorizo mixture and close using toothpicks. Heat 2 tbsp oil, sear pork and season. Transfer to an ovenproof dish, reserving pork fat in pan, and bake for 15-20 mins. Saute sliced mushrooms in pork fat. Add flour and continue to cook, stirring. Add sherry, cream and stock and simmer for 5 mins. Season. Serve pork chops with sauce. Garnish with thyme.
