Tofu, Spinach And Sausage Frittata - cooking recipe

Ingredients
    11 oz silken tofu, drained and chopped
    4 None eggs
    1 clove garlic, crushed
    11 oz soy sausages, thinly sliced
    5 oz spinach leaves, coarsely chopped
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease an 8-inch square baking pan. Line bottom and 2 sides with parchment paper, extending 2 inches above sides of pan.
    Mix tofu, eggs and garlic in a large bowl with a whisk until combined.
    Heat a lightly greased large skillet on medium heat. Cook sausages for 2-3 mins, until golden. Remove from pan.
    Cook spinach in same skillet for 1-2 mins, until wilted. Drain on paper towels. Stir sausages and spinach into tofu mixture. Season to taste. Pour tofu mixture into the prepared pan.
    Bake for 35-40 mins or until set. Cut into 4 to serve.
