Ingredients

60 g butter
2 tsp sugar
150 g plain flour
5 medium eggs
1 tsp baking powder
1 litre oil
3 tbsp caster sugar mixed with 1 tsp cinnamon
Preparation

Heat butter, sugar, 1/2 cup water and a pinch of salt in a medium saucepan until butter is melted. Quickly stir in the flour and continue stirring until dough begins to thicken and rise slightly.
Transfer dough to a bowl. Quickly stir in 1 of the eggs. Let stand for 10 mins. Stir in remaining 4 eggs, one a time. Stir in the baking powder. Spoon into a piping bag fitted with a large star tip.
Heat oil to 325\u00b0F in a saucepan on medium heat. Pipe three 4-inch lengths into the hot oil and fry until golden brown, turning as necessary. Remove with slotted spoon to paper towels to drain. Immediately dust with cinnamon sugar. Repeat until all the dough has been used.
