Tomato And Orzo Salad - cooking recipe

Ingredients
    1 cup orzo pasta
    1 lb ripe tomatoes, finely chopped
    2 tbsp chopped fresh flat-leaf parsley
    2 tbsp olive oil
    2 cloves garlic, crushed
    1 tsp grated lemon peel
    1/4 cup lemon juice
    6 oz ricotta salata, crumbled
Preparation
    Cook pasta in boiling salted water according to package directions. Drain; rinse under cold water. Transfer pasta to a large bowl; add tomatoes and parsley
    Meanwhile, whisk oil, garlic and lemon peel and juice in a small bowl.
    Pour dressing over pasta mixture; toss to coat well. Add ricotta; toss gently. Season with salt and pepper.
