Plum Muffins - cooking recipe
Ingredients

1 stick butter, softened
1/2 cup sugar
1 tsp vanilla extract
3 medium eggs
1/3 cup cornstarch
3/4 cup plus 1 tbsp all-purpose flour
1 tsp baking powder
4 None plums, pit removed, chopped
1 2/3 cups confectioners' sugar
None None Zest and juice of 1 lemon
Preparation

Preheat oven to 350\u00b0F. In a bowl, beat together the butter, sugar, vanilla, and a pinch of salt until creamy. Stir in the eggs one at a time then fold in the cornstarch, flour, and baking powder.
Line a muffin tray and divide the chopped plums between the holes. Top with the muffin mix and bake for about 25 minutes. Remove from the oven and cool on a wire rack.
Mix the confectioners' sugar with some lemon juice until a thick pouring consistency and spread on top of the muffins. Decorate with lemon zest and serve.
