Mixed Haloumi Salad - cooking recipe

Ingredients
    5.25 oz mixed greens
    1 (15 oz) jar baby beets, drained, halved
    1 bunch asparagus, trimmed, blanched
    1/2 bunch fresh mint leaves
    1/2 lb haloumi cheese, cut into thin slices
    1 tbsp olive oil + extra, to serve
    None None lemon wedges, to serve
Preparation
    Distribute mixed greens, beets, asparagus and mint between 4 serving plates.
    Heat a large frying pan over medium heat. Brush haloumi with oil and season. Sear for 1-2 mins per side, until golden. Arrange over salad.
    Serve drizzle with olive oil and lemon wedges on the side.
