Caprese Vegetable Panini - cooking recipe
Ingredients

2 tsp balsamic vinegar
2 tsp brown sugar
1 lb ciabatta, sliced horizontally
2 tbsp vegetable or olive oil
1 None red onion, halved, very thinly sliced
10 oz jarred chargrilled vegetables, drained, patted dry, sliced
3 None tomatoes, sliced
3 oz mozzarella cheese, grated
2 tbsp fresh basil leaves
Preparation

Preheat a sandwich press or frying pan over medium heat. Combine balsamic and sugar, whisking until sugar dissolves.
Brush bread with oil. Flip over and top with onion, vegetables, tomatoes, mozzarella and basil. Drizzle with balsamic mixture. Sandwich together. Working in batches, cook for 5 mins, or until golden and cheese melts. Cut in half and serve.
