Composed Melon And Parma Salad - cooking recipe

Ingredients
    1 lb cantaloupe melon, deseeded, flesh removed and finely diced
    3.5 oz Parma ham, cut into small pieces
    2 tbsp white wine vinegar
    1 tsp granulated sugar
    3 tbsp olive oil
    3 oz radish, trimmed and grated
    1/3 bunch watercress
Preparation
    For the stacks, place a 3 inch tart ring on a serving plate, spoon in a 1/4 of the melon, then add a 1/4 of the ham. Carefully remove the ring and repeat on the remaining serving plates.
    Whisk together the vinegar and sugar. Season then gradually whisk in the oil. Toss with the radish then place on top of the ham. Garnish with the watercress and serve.
