Parsnip Mashed Potatoes With Spinach - cooking recipe
Ingredients

1/2 lb parsnips, peeled, chopped
2 lb baking potatoes, peeled, chopped
1 clove garlic, peeled
3 tbsp butter
1 cup half-and-half
1 cup baby spinach, chopped
Preparation

In a large saucepan, cook parsnips, potatoes and garlic in boiling salted water until tender. Drain then return to saucepan and heat until vegetables dry out. Remove from heat and mash with butter and half-and-half. Season then stir in spinach.
