Fava Bean, Garden Pea And Feta Salad - cooking recipe

8.75 oz fresh fava beans
8.75 oz frozen garden peas
1/2 cup pine nuts, toasted
8.75 oz feta cheese
6-8 sprigs fresh mint leaves
6-8 sprigs fresh cilantro leaves
1 None lime, juiced
3 tbsp extra virgin olive oil
Preparation

Blanch fava beans in boiling salted water for 2 mins, drain then plunge in ice water. Drain and remove skins. Blanch peas for 2-3 mins, until al dente. Drain then mix with fava beans. Toss with pine nuts. Crumble feta cheese over top then add mint and cilantro.
Whisk together lime juice and olive oil, season then drizzle over salad. Serve.
