Tuna Steaks And Mixed Vegetables With Orange Sauce - cooking recipe

Ingredients
    600 g new potatoes, halved
    2 tbsp vegetable oil
    1 None large onion, peeled and finely chopped
    1 None courgette, halved lengthways and sliced
    1 None cauliflower, cut into small florets
    1 tsp vegetable bouillon
    100 g butter
    1 None egg yolk
    1 None blood orange, 1/2 sliced, 1/2 juiced
    1 None orange, grated zest
    4 None tuna steaks (150g each)
    None None Fresh basil, for garnish
Preparation
    Cook the potatoes in boiling salted water for 20 mins. Heat 1 tbsp oil in a saucepan and saute the onion and zucchini until softened. Remove from the pan and add the cauliflower and 3/4 cup water. Bring to a boil and stir in the bouillon. Cover and cook for 8 mins. Add the onion and zucchini and cook for 2 mins.
    To make the orange sauce: Melt the butter slowly in a separate saucepan. Bring to a boil and skim off the foam. Place the egg yolk and orange juice in a metal bowl set over a hot water bath and whisk. Whisk in the butter in a thin stream. Stir 1 tsp orange zest and season to taste.
    Heat 1 tbsp oil and sear the tuna for 2 mins on each side. Season to taste.
    Drain the potatoes and mix with the vegetables. Season to taste. Arrange on plates with the tuna steaks and drizzle over the sauce. Garnish with basil, orange slices and remaining orange zest.
