Exotic Mini Pizzas - cooking recipe

Ingredients
    21 g fresh yeast
    125 ml warm water
    250 g plain flour
    1 tsp salt
    1 tsp sugar
    2 tbsp olive oil
    1 None pineapple, peeled and sliced
    400 g smoked turkey breast, diced
    150 g emmental cheese, grated
    1 tsp red pepper
    100 g fresh coconut or shredded coconut
    None None mint leaves, for garnish
Preparation
    Dissolve the yeast with 1/2 cup warm water. Mix the flour, 1 tsp salt and 1 tsp sugar in a large bowl, add the yeast mixture and oil and knead into a smooth dough. Cover and keep in a warm place for about 10 mins. Turn the dough out onto a floured surface and knead again for 2-3 mins to de-gas. Divide the dough into 8 pieces, roll into 4 inch discs and transfer to a lined baking tray.
    Preheat oven to 400\u00b0F. On each mini pizza, place a slice of pineapple, some diced turkey, cheese and cayenne. Cover and set aside for 10 mins then bake for 10 mins. Sprinkle with the coconut then return to the oven for another 5 mins. Serve garnished with mint.
