Fish Kebabs - cooking recipe

Ingredients
    1 1/3 lbs mixed tuna, swordfish, snapper, and/or cod, cut into 1 inch chunks
    12 None small shallots, halved
    1 None large red pepper, deseeded and chopped coarsely
    1 None large yellow pepper, deseeded and chopped coarsely
    2 None medium zucchini, sliced thickly
    1/4 cup extra virgin olive oil
    1 tbsp dried oregano
    None None Flat-leaf parsley, chopped (optional)
Preparation
    Thread the fish and vegetables, alternating, onto skewers.
    Combine the oil and oregano in a small bowl.
    Cook the skewers on heated oiled grill or grill pan, basting with oil mixture, for about 5 mins or until browned all over and just cooked through. Sprinkle with parsley, if desired.
