Prosciutto And Scallop Skewers - cooking recipe

Ingredients
    8 None small scallops
    4 slices prosciutto, halved and folded like concertinas
    2 tbsp olive oil
    1/2 None lemon, juiced
    None None Lemon wedges, to serve
Preparation
    Thread 2 scallops and 2 - 1/2 slices prosciutto alternately onto 4 wooden skewers. Heat oil in a frying pan until smoking hot and cook skewers for 2 mins on each side. Drizzle with lemon juice and season. Serve with lemon wedges.
