Greek Salad With Fried Feta - cooking recipe
Ingredients

100 ml white wine vinegar
Pinch None caster sugar
20 g parsley, finely chopped
7 tbsp olive oil
500 g tomatoes, diced
1 None cucumber, diced
1 None onion, diced
1 None lettuce, chopped
75 g black olives
200 g feta, sliced
1 None egg, beaten
50 g breadcrumbs
Preparation

Whisk the vinegar, sugar and 3/4 of the parsley together and season. Whisk in 5 tbsp oil. Mix the tomatoes, cucumber, onion, lettuce and olives with the vinaigrette and set aside.
Dip each slice of feta in the beaten egg then cover with breadcrumbs and press down lightly so that the breadcrumbs stick to the feta. Heat 2 tbsp oil in a pan, add the feta and fry each piece for 1-2 mins on each side until golden. Divide the salad between 4 plates and place the feta on top. Sprinkle with the remaining parsley then serve.
