Pear And Raspberry Crumble - cooking recipe

Ingredients

    5 None red bartlett pears, peeled, cored, sliced
    1/3 cup water
    1 tbsp brown sugar
    1 None vanilla bean, split, scraped
    1/2 cup frozen raspberries
    None None For the Crumble Topping and to Serve
    3/4 cup all-purpose flour
    1/3 cup packed brown sugar
    6 1/3 tbsp butter, cubed
    1/2 cup macadamia nuts, chopped
    1/2 cup dried, unsweetened coconut
    None None Cream or ice-cream, to serve
Preparation
    Preheat oven to 350\u00b0F.
    In a saucepan, combine pears, water, sugar and vanilla (both scraped seeds and pod). Stir over low heat until sugar dissolves. Simmer, uncovered, for 4-5 minutes, until pears soften slightly. Remove from heat and mix in berries. Remove pod.
    For the crumble topping: Sift flour into a medium bowl. Stir in sugar. Using your fingertips, rub in butter until mixture resembles breadcrumbs. Lightly stir nuts and coconut into mixture.
    Spoon fruit mixture into a 6-cup shallow baking dish. Sprinkle crumble mixture over the top.
    Bake for 20-25 minutes, until crumble is crisp and golden. Serve with cream or ice-cream.
