Boscaiola Pasta Sauce - cooking recipe

Ingredients
    4 1/2 tbsp butter
    5 oz pancetta, finely chopped
    5 oz mushrooms, thinly sliced
    1 clove garlic, minced
    1 tsp cracked black pepper
    1 1/4 cups heavy cream
    1/3 cup finely grated Parmesan cheese
Preparation
    Melt butter in a medium frying pan over medium-high heat. Cook pancetta, stirring, for 5 mins. Add mushrooms and garlic. Cook, stirring, for 3 mins. Add pepper and cream. Simmer for 5 mins, or until sauce reduces by 1/2. Add cheese and stir over low heat for 2 mins, or until cheese melts.
