Tomato And Basil Soup - cooking recipe
Ingredients

1 tbsp butter
1 None onion, chopped
3 1/3 lb tomatoes, peeled, seeded
1/3 cup fresh basil leaves, chopped
4 cups chicken stock
None None crusty white bread, to serve
None None green salad, to serve
Preparation

In a heavy-bottomed soup pot, melt butter over medium heat. Saute onion until soft and translucent. Add tomatoes and basil. Cook for 2-3 mins. Cover with stock and bring to a boil. Reduce heat and simmer for 30 mins. Puree until smooth with a hand blender.
Serve with crusty white bread and a green salad.
