Ingredients

8 None apples
2 cups apple juice
3/4 cup apple cider vinegar
3 1/3 lb rolled pork loin, skin and fat removed
None None Mustard Fruits
1 cup granulated sugar
2 None cinnamon sticks
10.5 oz dried apricots
9 None dried pears
3/4 cup apple cider vinegar
1/2 tbsp dry mustard
2 tsp cornstarch, mixed with 2 tsp water
Preparation

Preheat oven to 350\u00b0F.
Slit skin around center of apples. Place in a baking dish and pour apple juice and vinegar over top. Lightly coat pork loin with oil then place on an oiled wire rack. Place pork and rack over apples in baking dish. Bake, uncovered, for 1 hour, or until apples are tender.
Remove apples from dish and wrap in foil. Return pork to oven and bake for 1 hour, or until tender. Remove pork from dish and cover with foil to keep warm.
Meanwhile, to make the mustard fruits, combine 3/4 cup sugar with 1 cup water in a medium saucepan. Stir over low heat until sugar is dissolved. Add cinnamon sticks and fruit. Stir over low heat for 10 mins, or until fruit is soft. Add remaining sugar and vinegar, stir for 5 mins, or until thick and syrupy. Let cool slightly then stir in mustard.
To make the gravy, skim fat from pan juices. Add cornstarch slurry and stir until sauce boils. Serve pork immediately with apples, mustard fruits and sauce.
