Berry Gelatin Dessert With Nectarines - cooking recipe

3 1/2 cups mixed raspberry and cranberry juice
1/2 tbsp powdered gelatin
3 None ripe nectarines, sliced into wedges
None None sugar, to taste

Pour 1 cup of the juice into a microwave-safe bowl. Use a fork to stir in the gelatin, then microwave on high for 30 seconds, or until the gelatin has dissolved. Alternately, stand the bowl in a pan of simmering water until the gelatin dissolves. Allow to cool slightly, then stir the gelatin mixture into the remaining juice. Divide the juice mixture between 6 small molds. Place on a tray, cover and refrigerate 4 hours or until set.
Meanwhile, sprinkle the nectarines with the sugar and toss gently to combine.
To serve, dip the molds, one at a time, into a bowl of hot water for a few seconds. Run a small spatula between the gelatin and the mold to create an air pocket. Turn the mold onto a serving plate, hold the plate and mold together and shake to loosen. Serve in dessert dishes with the nectarines.
