Oysters With Two Dressings - cooking recipe

Ingredients
    None None FOR THE WASABI SOY DRESSING
    2 tbsp rice wine vinegar
    2 tbsp soy sauce
    2 tsp sugar
    1/2 tsp wasabi paste
    1 None green onion, thinly sliced
    None None FOR THE TOMATO CHIVE DRESSING
    1/2 None tomato, seeded and finely chopped
    1 tbsp red wine vinegar
    2 tsp extra virgin olive oil
    1 tbsp finely chopped fresh chives
    None None TO SERVE
    24 None oysters
Preparation
    For the wasabi soy dressing, combine vinegar, sauce, soy sugar and wasabi paste in small saucepan. Heat gently, stirring, until sugar dissolves. Bring to the boil. Reduce heat to low; simmer 1 min. Cool; stir in onion.
    For the tomato-chive dressing, combine all ingredients in small bowl.
    Shuck the oysters. Place on the half shell on a platter. Spoon each dressing over 12 oysters and serve immediately.
