Burgers With Lime-Onion Relish - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None onion, finely chopped
    2 cloves garlic, minced
    1 lb ground beef
    3 tbsp fresh parsley, chopped
    8 slices ciabatta, toasted
    2/3 cup hummus
    1 2/3 cups baby spinach
    None None shoestring fries, to serve
    None None Lime and Red Onion Relish
    2 1/2 tbsp butter, chopped
    2 None red onions, thinly sliced
    2 tbsp brown sugar
    1 None lime, zested and juiced
    1 None long red chili, deseeded, finely chopped
Preparation
    In a large frying pan, heat 1 tbsp oil over high heat. Saute onion and garlic for 3-4 mins, until tender. Set aside to cool.
    To make lime and red onion relish, melt butter over high heat. Saute onion for 4-5 mins, until tender. Add sugar, lime zest, lime juice and chili. Cook, stirring, over medium heat for 8-10 mins, until onion caramelizes.
    Meanwhile, add ground beef and parsley to cooled onion mixture. Season to taste. Shape into 4 patties. Heat remaining oil in a large frying pan over medium heat. Cook patties for 4-5 mins per side, until browned and cooked to your liking.
    Spread hummus over 4 slices of toast. Top with patties, spinach and onion-lime relish. Sandwich with remaining toast. Serve with shoestring fries.
