Sweet Chili Sauce - cooking recipe

Ingredients
    1 lb red chilies, deseeded
    8 cloves peeled garlic
    2 cups rice vinegar
    2 1/4 cups sugar
    1/4 cup fish sauce
Preparation
    In a food processor, combine chilies and garlic and process until smooth. Combine with 2 cups water, rice vinegar, sugar and fish sauce and simmer for 20-25 mins, stirring occasionally, until thickened and slightly jammy.
