Easy Irish Stew - cooking recipe

Ingredients
    1 None leg oflamb (about 1.2kg), meat cut from the bone
    1 small head cabbage ( about 1kg), quartered and stalk removed
    500 g carrots, peeled and cut into thick slices
    500 g potatoes, peeled and cut into quarters
    4 None onions, cut into eighths
    1 bunch thyme, washed and leaves removed from 12
    4 None bay leaves
    1/2 litre vegetable stock
    3 stalks parsley, chopped finely
Preparation
    Layer meat, carrots, onions, cabbage and potatoes in a Dutch oven. Season each layer and add thyme and bay leaves. Add stock then cover and simmer over medium heat for 1 hour. Adjust seasoning and serve garnished with parsley.
