Roasted Turkey With Maple Cranberry Glaze - cooking recipe

Ingredients
    2 tsp kosher salt
    1 tsp ground black pepper
    1 tsp garlic powder
    4 tbsp softened butter
    1/2 oz concentrated chicken or turkey broth
    1 tbsp chopped fresh parsley leaves
    1 tbsp minced shallot
    1 tbsp minced garlic
    1 (15 lb) turkey
    None None Maple Cranberry Glaze
    1 tbsp butter
    12 oz fresh or frozen cranberries
    1/2 cup maple syrup
    3/4 cup cranberry juice
    3/4 cup apple cider
    1 tsp salt
    1 tsp ground black pepper
    None None bay leaves, fresh thyme, currants, kumquats and apple slices, to garnish
Preparation
    Preheat oven to 375\u00b0F. In a small bowl, combine salt, pepper, garlic powder, butter, broth concentrate, parsley, shallot and garlic. Set aside.
    Transfer turkey to a roasting pan with a rack. With your fingers, gently loosen skin covering breast and legs. Spread 1/2 the butter mixture under the skin. Truss turkey and fold wings under. Pat skin dry with a paper towel then rub with remaining butter. Roast turkey for 18 mins per pound, or until a thermometer inserted in the thickest part of the thigh reads 175\u00b0F. Remove from oven and tent with foil. Let rest for 20 mins.
    Meanwhile, for the glaze, combine all glaze ingredients in a medium saucepan. Bring to a boil then reduce heat to medium-low and let simmer until cranberries burst, about 8-10 mins. Strain through a sieve and let cool. Serve with turkey.
