Pear And Cranberry Squares - cooking recipe

7 oz butter, plus extra for greasing
4 cups all purpose flour, plus extra for dusting
1.5 oz fresh yeast
1 1/3 cup sugar
1 cup + 5 tbsp milk
1 medium egg
Pinch None salt
2 tbsp honey
7 oz flaked almonds
7 pears peeled, cored, sliced and drizzled with lemon juice
5 oz dried cranberries
Preparation

Grease a 12 x 16 inch baking tray with butter and dust with a little flour. Mix the yeast with 3 tsp of sugar until the yeast has dissolved.
Melt 2 oz of the butter in a saucepan, remove from the heat and pour over the 1 cup of milk.
Place the flour in a bowl with the egg, 4 tbsp of the sugar, the salt and the yeast mixture. Knead with a dough hook for 2-3 mins until a smooth dough forms. Cover with plastic wrap and set aside for 30 mins.
Lightly dust a work surface with flour, roll out the dough to a rectangle shape, large enough to fit the pan, transfer to the pan, cover with plastic wrap and leave in a warm place for 20-30 mins.
Preheat the oven to 400\u00b0F. Place the remaining butter, remaining sugar and the honey in a saucepan to make a syrup. Bring to a boil, then add the almonds and the 5 tbsp of milk. Remove from the heat and allow to cool for 10-15 mins.
Place the pear slices, over-lapping, on the dough. Drizzle over the syrup and bake for 40 mins. Cover with foil before the end of cooking time if necessary. Remove from the oven and garnish with the cranberries. Cool in the pan on a wire rack. Cut into squares to serve.
