Cumberland Sauce - cooking recipe
Ingredients

1 None shallot, thinly sliced
1/2 cup red wine vinegar
1/2 cup port
1/2 tsp lemon, zested
1/2 tsp orange, zested
1/4 cup red currant jelly
1 cup beef stock
Preparation

Bring shallot and vinegar to a boil in a small saucepan. Reduce heat and simmer until mixture reduces by 1/2.
Add remaining ingredients to pan and bring to a boil. Reduce heat and simmer for 20 mins, or until mixture is reduced by 1/2 again. Strain into small serving vessels and let cool to room temperature.
