Squash And Caramelized Onion Scones - cooking recipe

Ingredients
    2 1/2 tbsp butter
    1 tbsp oil
    1 None red onion, thinly sliced
    2 tbsp honey
    2 tsp white balsamic vinegar
    None None Squash Scones
    3 1/4 cups self-rising flour, sifted
    1/2 cup butter, chopped, softened
    1/2 lb winter squash, cooked, mashed and cooled
    1/2 cup buttermilk + extra to glaze
    1 None egg, lightly beaten
    1 tsp dried thyme
    None None sliced cheese, to serve
    None None tomato chutney, to serve
Preparation
    Preheat oven to 425\u00b0F. Lightly grease and flour a baking tray.
    For the caramelized onions, heat butter and oil over medium heat. Sweat onion for 6-8 mins, until tender. Add honey and vinegar. Cook, stirring, over low heat for 4-5 mins, until caramelized. Let cool.
    Meanwhile, sift flour into a large bowl. Cut in butter until mixture resembles breadcrumbs. Add squash, buttermilk, egg, thyme and caramelized onions. Season. Quickly mix into a soft, sticky dough. Turn out onto a floured surface and knead lightly. Press into a 3/4 inch thick disc then cut into 16 - 2 1/2 inch rounds. Place close together on prepared tray and brush with extra buttermilk. Bake for 20-25 mins, or until golden brown. Let cool on a wire rack.
    Serve with sliced cheese and tomato chutney.
