Cider Chicken Casserole - cooking recipe

Ingredients
    4 tbsp oil
    4 None chicken thighs
    4 None chicken legs
    2 lb small potatoes, peeled
    8.75 oz shallots, cut into wedges
    8.75 oz button mushrooms, halved
    2 cloves garlic, chopped
    4 sprigs fresh thyme, leaves stripped from stems
    7 oz cherry tomatoes, halved
    1 2/3 cups cider
    1 2/3 cups vegetable stock
    None None fresh flat-leaf parsley, for garnish
Preparation
    Heat oil in a Dutch oven. Cook chicken until browned all over. Season then set aside. Add potatoes, shallots, mushrooms, garlic and 3/4 of the thyme. Saute for 5 mins. Season. Return chicken to pan along with 1/2 the tomatoes. Add cider and stock. Bring to a boil, cover and cook over medium heat for 30 mins. Add remaining tomatoes and cook for 5 mins. Season and add a pinch of sugar.
    Garnish with parsley and remaining thyme.
