Fruit Loaf - cooking recipe

Ingredients
    75 ml semi-skimmed milk
    375 g plain flour
    42 g dried yeast
    2 tbsp sugar
    150 g butter, softened
    1/2 None lemon, zested
    30 g ground almonds
    100 g raisins
    50 g currants
    1 tsp cardamom
    30 g candied lemon peel
Preparation
    Heat milk until lukewarm. Place the flour in a bowl, create a well in the middle, crumble in the yeast, pour in the warm milk and mix well with half the sugar until a dough is formed. Place the dough in a warm place for about 30 minutes.
    Mix the butter, remaining sugar, a pinch of salt, lemon zest, almonds, raisins, currants, cardamom and candied peel together then mix in with the dough. Knead well and let it proof in a warm place for another 30 minutes.
    Preheat oven to 325\u00b0F. Turn the dough out onto a baking tray lined with baking paper and form a loaf shape. Leave to proof for another 15 minutes in a warm place then bake for 45-50 minutes. Allow to cool before cutting into slices.
