None None For the Pizza Dough
1/2 cup all-purpose flour
1 tsp instant yeast
1 tsp sugar
1 tsp kosher salt
1 tbsp olive oil
None None Caramelized Onion and Potato Pizza
4 oz caramelized onions
2/3 cup coarsely grated mozzarella cheese
2 None potatoes, unpeeled
1/3 cup finely grated Parmesan cheese
2 tbsp olive oil
2 tsp fresh thyme leaves
2 cloves garlic, minced
Preparation

To make the pizza dough, combine flour, yeast, sugar and salt in a medium bowl. Make a well in the center and stir in oil and 1/2 cup warm water. Transfer to a floured work surface and knead for 10 mins, or until smooth and elastic. Place dough in a large oiled bowl, cover and let stand in a warm place to proof for 1 hour, or until dough doubles in size.
Preheat oven to 475\u00b0F. Oil 2 oven or pizza trays and place in oven while preheating.
Turn dough out onto a floured work surface and knead until smooth. Divide into 2 portions. Roll each portion out on a floured work surface into a 6x14 inch ovals. Arrange on trays.
Spread caramelized onions over pizza bases and sprinkle with mozzarella. Using a mandoline, cut potato into paper thin slices. Arrange, slightly overlapping, on pizzas and sprinkle with Parmesan. Combine oil, thyme and garlic in a small bowl then drizzle over pizzas. Bake for 15 mins, or until bases are browned and crispy.
