10.5 oz feta cheese, crumbled
1 oz Parmesan cheese, grated
2 tbsp finely shredded fresh mint
1 None large egg, lightly beaten
1 None lemon, zested
12 sheets filo dough
1/2 cup butter, melted
Preparation

Preheat oven to 400\u00b0F. Grease 2 large baking trays. Mash together feta, Parmesan, mint, egg and lemon zest. Season to taste.
Layer 2 filo sheets, brushing each with melted butter. Working with the longest side facing you, cut stack into 6 strips (keep remaining pastry covered with a clean tea towel to prevent drying out).
Spoon 2 tsp cheese mixture onto 1 corner of each strip. Fold 1 corner of pastry diagonally across filling to the other edge to form a triangle. Continue folding to end of strip, retaining triangle shape. Place on tray and brush with butter. Repeat with remaining pastry and cheese mixture. Bake for 10-15 mins, until crisp and golden brown. Serve hot.
