Tomato Chili Jam - cooking recipe

Ingredients
    2 tsp olive oil
    2 cloves garlic, crushed
    1 tbsp finely grated ginger
    2 cans (15 oz each) diced tomatoes
    2/3 cup sweet chilli sauce
    1/3 cup packed brown sugar
    2 None limes, juiced
Preparation
    Heat oil in a large saucepan on medium heat. Cook garlic and ginger for 1 min, until fragrant. Add tomatoes, chili sauce, sugar and lime juice. Bring to a boil, stirring to dissolve sugar.
    Reduce heat to low; simmer for 25-30 mins or until mixture has thickened slightly. Set aside to cool.
    Pour into an airtight container or sterilized jars. Store in refrigerator for up to 1 month.
