Potato, Sausage And Avocado Salad - cooking recipe
Ingredients

1/2 None red onion, thinly sliced
1/4 cup red wine vinegar
1 lb Italian sausages, pierced with a fork
1 lb new potatoes
4 oz roasted red peppers, cut into strips
2 None avocados, peeled, cut into bite-sized pieces
1 bunch watercress, washed, trimmed
1/4 cup extra-virgin olive oil
Preparation

Preheat oven to 350\u00b0F. Toss onion with 1 tbsp vinegar then set aside.
Place sausages in a large baking dish. Bake for 25-35 mins, until cooked through. Let cool slightly then slice thinly.
Meanwhile, cook potatoes in boiling, salted water for around 20 mins, until tender. Drain. Let cool then halve.
Whisk remaining vinegar with 1 tsp salt. Add potatoes and toss to coat. Add sausage, peppers, avocados and watercress. Drain reserved onions and add to salad. Drizzle with olive oil and toss well. Season to taste and serve.
