Mocha Cupcakes - cooking recipe

2 None eggs
2/3 cup packed brown sugar
1 tbsp powdered instant coffee
1 tsp vanilla extract
1 1/4 cups self-rising flour
1/3 cup unsweetened cocoa powder, plus additional, for dusting
1 cup vanilla yogurt
Preparation

Preheat the oven to 350\u00b0F. Line a 12-cup muffin pan with paper liners.
Beat eggs and sugar in a large bowl with an electric mixer for 3-4 mins until fluffy. Add coffee powder and vanilla and beat until well blended.
Sift flour and cocoa together. Fold into egg mixture alternating with yogurt, until just combined. Do not overmix. Spoon into muffin cups until 2/3 full.
Bake for 12-15 mins until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on wire rack. Dust with additional cocoa powder.
