Chicken And Seafood Gumbo - cooking recipe
Ingredients

1/4 cup canola oil
1 lb chicken legs or thighs
2 stalks celery, sliced
1 None onion, sliced
1 None leek, trimmed, sliced
1 None green pepper, seeded, sliced
2 cloves garlic, minced
1 tbsp all-purpose flour
1 tsp smoked paprika
2 cups chicken stock
1 (13.5 oz) can diced tomatoes
3 tsp Tabasco sauce
9 oz raw shrimp, peeled, deveined
9 oz boneless fish fillets, cubed
1 handful fresh parsley leaves, chopped
None None lemon juice, to taste
None None steamed rice, to serve
Preparation

Heat 2 tbsp oil in a large frying pan over high heat. Brown chicken then set aside.
Add remaining oil to pan. Saute celery, onion, leek, pepper and garlic for 5 mins, until tender. Add flour and paprika. Cook, stirring, for 1 min. Return chicken to pan along with stock, tomatoes and Tabasco. Season to taste. Simmer for 10-15 mins.
Add seafood and simmer for 5 mins. Add parsley and lemon juice. Serve with rice.
